Food to try
Laddu prasadam (world-famous)
Tirupati Balaji temples sacred offering—a large, dense, dough-like ladoo made from chickpea flour, sugar, cashews, cardamom and ghee; made in quantities of 100,000 per day; Tirupati's laddoo prasadam has a GI tag; the waiting process of receiving prasad is part of the experience
Anna Prasadam (free meals)
Tirupati's legendary free meal tradition—the TTD (Tirumala Tirupati Devasthanams) serves free lunch to thousands of pilgrims daily in the Annadanam program; simple rice, sambar, rasam, vegetables and buttermilk; accepting prasad is considered merit-generating
Pulihora
Andhra Pradesh's tamarind rice temple offering—rice seasoned with tamarind paste, peanuts, curry leaves, mustard seeds and dried chili; one of the most important prasad forms; the tamarind preservation keeps it safe for days; temple versions are considered distinctly blessed
Daddojanam
Andhra's temple curd rice offering—cooked rice mixed with yogurt, cooled, seasoned with tempering of mustard, ginger and dried chili; a prasad at Andhra temples; also consumed as comfort food during illness or hot weather; the tempering fragrance is extraordinary
Filter coffee
South India's great ritual—100% arabica coffee beans slow-dripped into thick decoction, combined with hot milk in a brass tumbler and davara; poured from height to cool the temperature and create a froth; the MTR or Darshini chain version sets the standard
