Food to try
Simple vegetarian
India's vast everyday vegetarian cooking tradition—dal, vegetable curry, rice or roti; available at every dhaba, train station and temple canteen across India; the quality of the dal and the freshness of the vegetable determines everything; never as simple as it looks
Langar
The Sikh tradition of free communal meals at every Gurdwara—dal, vegetables, roti and kheer prepared and served by volunteers; the Golden Temple's langar feeds over 100,000 daily; the act of eating together regardless of caste, faith or wealth is the langar's theological point
North Indian thali
The Punjab-North India complete meal—dal makhani, paneer butter masala, seasonal vegetable, raita, pickle, one or two types of bread and kheer; wheat-based and dairy-heavy; each state has its distinct thali but the North Indian thali in a Punjabi dhaba benchmark is universal
Chole bhature
Delhi's most iconic breakfast—large puffed fried bread (bhature) alongside a fiery chickpea curry finished with ginger and pomegranate; eaten standing at dhabas of Paharganj or posh restaurants; the best in Old Delhi near Sitaram Bazaar
