Chiang Rai is safe. The main practical concern is air quality in February-April (slash and burn farming season) — check Air4Thai daily. Border areas near Myanmar require special permits and should only be visited with licensed guides.

Culture & etiquette

Temple dress code strict — long trousers/skirt and covered shoulders mandatory at White Temple.
  • + Dress fully modestly at Wat Rong Khun — shoes off, shoulders and knees covered (sarongs provided)
  • + Visit the Opium Museum at the Hall of Opium near the Golden Triangle — extraordinary history of the narcotics trade
  • + Support hill tribe (Karen, Akha, Lahu) communities by purchasing craft directly from village cooperatives
  • - Don't visit 'elephant trekking' that uses bullhooks or chains — choose ethical sanctuaries only
  • - Don't photograph hill tribe women in 'traditional dress' set up for tourists without payment — it's a commercial arrangement
  • - Don't visit Myanmar or Laos border crossings without checking current political safety

Khao soi (Northern Thai curry noodle soup)

Northern Thailand's signature dish — egg noodles in a rich, mildly spiced coconut-curry broth (made with dried chillies, turmeric and coconut milk) topped with crispy fried egg noodles and served with pickled mustard greens, shallots and lime; Chiang Rai's khao soi is slightly different from Chiang Mai's — slightly thicker broth, more turmeric; a meal that defines the north

Sai ua (Northern Thai sausage)

Grilled pork sausage stuffed with lemongrass, galangal, kaffir lime leaves, dried chillies and shrimp paste — a distinct northern Thai preserve technique; sold at every morning market in links; grilled over charcoal and eaten with sticky rice and fresh vegetables; the fat from the pork bastes the herbs as it grills

Nam prik ong (northern tomato chilli dip)
